Shepherds Pie

Shepherds Pie is basically minced lamb with a potato topping. Cottage pie is when you use beef! Don't mix the 2 up! lol Historically it was apparently any animal which was roaming around outside your cottage but thank god we have moved on else we would all be having chav pie!

So anyway here you go:

1 tbsp sunflower oil
1 large onion , chopped
2-3 medium carrots , chopped
500g pack minced lamb
2 tbsp tomato purée
large splash Worcestershire sauce
500ml beef stock
900g potatoes , cut into chunks
85g butter
3 tbsp milk

1.Heat the oil in a medium saucepan, then soften the onion and carrots for a few mins. When soft, turn up the heat, crumble in the lamb and brown, tipping off any excess fat. Add the tomato purée and Worcestershire sauce, then fry for a few mins. Pour over the stock, bring to a simmer, then cover and cook for 40 mins, uncovering halfway.

2.Meanwhile, heat the oven to 180C/ fan 160C/ gas 4, then make the mash. Boil the potatoes in salted water for 10-15 mins until tender. Drain, then mash with the butter and milk.

3.Put the mince into an ovenproof dish, top with the mash and ruffle with a fork. Put cheddar cheese on the top. Lots!!! Bake for 30 mins until the top is starting to colour and the mince is bubbling through at the edges. to brown,put under the grill for a few minutes. Leave to stand for 5 mins before serving.

Add some veg if the people you are feeding are complete gannets and enjoy!

  1. Preheat the oven to 220C/425F/Gas 7.

  2. Blanch the pepper for 2-3 minutes in a saucepan of boiling salted water, then drain, refresh in cold water and drain again.

  3. Wipe the mushrooms and cut into quarters. Sauté in the 10g/1/2oz butter for 2-3 minutes, then set aside.

  4. For the sauce, melt the 25g/1oz butter in a heavy-bottomed saucepan, add the flour and cook slowly over a low heat until the mixture is straw-coloured. Pour in the chicken stock, turn up the heat and stir constantly until simmering. Add the cream and reduce until the sauce has a syrupy consistency. Add the lemon juice and tarragon.

  5. Turn off the heat, add the chicken, peppers and mushrooms to the pan.

  6. Butter an ovenproof dish large enough to hold the chicken pie mixture with room to spare. Add the chicken mixture to the dish.

  7. Roll out the pastry on a floured work surface, to a thickness of about 0.25in/1cm. Place the pastry over the filling and carefully trim the edges. Use the trimmings to make cut-out shapes to decorate the surface of the pie. Cut a couple of air holes with a knife to allow the steam to escape. Brush the pastry with the beaten egg.

  8. Bake the pie in the preheated oven for about 25-35 minutes. The top should be nicely browned and the filling piping hot. Remove, allow to cool slightly and serve.

Carne con tomate (Meat with tomate salse)

Ingredients:
- pork (500g)
- olive oil (2 spoons)
- onion (1)
- garlic (1)
- crushed tomate (800g)
- white wine (small glass)
- sugar (1 spoon)
- salt (as u like)

Steps:

I use a big pan

1 Prepare olive oil + onion around 5 minutes, until onion is slow.
2 Add garlic and pork, and leave it for around 5-10 minutes more.
3 Add tomate ,wine, sugar and salt, move it, and cover the pan. leave it around 1 hour (medium fire, number 3)

Every 15-20 minutes, move it a bit

Pollo a la Naranja (Chicken with orange sauce)




Ingredients:
- Chicken
- Garlic (2)
- Onion (1)
- White wine (2 glasses)
- olive oil (1/2 glass)
- oranges (4)
- potatoes (4-5)

Steps:

- cut the garlics and onions and to fry them in olive oil for a few minutes. Put it in a pan with orange juice (3 oranges) and white wine , and let them to cook for 10 minutes.

- cut the potatoes

- Set the oven on 180 degree.

- Leave the potatoes on the bottom, put the chicken, and pour all the sauce over it.
- finally cut a orange , and put it over ...

Wait around 1 hour and voila!!!
